Delightful vanilla and cream cheese cupcakes decorated to look like cheerful daisies, perfect for any celebration.

- 140 ml Buttermilk
- 120 g Soft unsalted butter
- 150 g Granulated sugar
- 2 Eggs
- 1 tbsp Vanilla extract
- 160 g All-purpose flour
- 20 g Corn starch
- 1 tsp Baking powder
- ½ tsp Baking soda
- 1 pinch Salt
- 160 g Cream cheese
- 100 g Soft unsalted butter
- 300 g Icing sugar
- 1 tsp Vanilla extract
- Yellow food coloring
- Orange food coloring
Instructions
- Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
- Combine the soft unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Whisk together the dry ingredients in another bowl.
- Slowly add the dry ingredients to the wet mixture alternating with the buttermilk.
- Fill each cupcake liner about two-thirds full with batter and bake for 20-22 minutes.
- Cool the cupcakes in the pan for 5 minutes before transferring to a wire rack.
- Mix the cream cheese and soft unsalted butter until smooth, then gradually add icing sugar and vanilla extract.
- Divide the frosting and color one portion yellow and the other orange.
- Frost the cooled cupcakes with cream cheese frosting using a piping bag.
- Pipe daisy petals with the yellow frosting and a dot in the center with the orange frosting.
Notes
Room temperature ingredients yield better results. Don’t over-mix to keep cupcakes light and fluffy.
