Ingredients
2 medium sweet potatoes
1 cup quinoa
1 avocado
2 tbsp olive oil
2 tbsp balsamic vinegar
1 orange (zest + juice)
1 tsp Dijon mustard
1 tsp honey or maple syrup
Salt & pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Peel and cube sweet potatoes, toss with oil, salt, and pepper, roast for 25–30 minutes.
3. Rinse quinoa, cook with water until fluffy.
4. Whisk together dressing ingredients until smooth.
5. Assemble bowl with quinoa, sweet potatoes, avocado slices, and drizzle with dressing.
Notes
Add leafy greens for freshness.
Top with seeds or nuts for crunch.
Keep avocado fresh by slicing only when serving.
