Description

Elegant roasted sweet potato boats filled with creamy melted brie, drizzled with honey, and topped with jewel-like pomegranate seeds and fresh herbs a festive appetizer or side dish perfect for holiday gatherings.


Ingredients

2 large sweet potatoes

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

4 oz brie cheese, sliced

2 tbsp honey

1/4 cup pomegranate seeds

1 tbsp chopped fresh rosemary or thyme

Optional: crushed pecans or walnuts for garnish


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Cut sweet potatoes in half lengthwise and brush with olive oil.

3. Sprinkle with salt and pepper, then place cut side down on the baking sheet.

4. Roast for 25–30 minutes, until tender and lightly caramelized.

5. Flip the potatoes, gently press down the centers to form a small well.

6. Place slices of brie in each well and return to oven for 5 minutes, until cheese is melted.

7. Drizzle with honey, sprinkle pomegranate seeds and herbs on top.

8. Add crushed nuts if desired, then serve warm as an appetizer or festive side.

Notes

You can use goat cheese instead of brie for a tangier flavor.

For extra holiday flair, drizzle with balsamic glaze or maple syrup.

Serve alongside roasted meats or a fresh green salad for a balanced meal.
