Description

A stunning autumn-inspired vegetarian lasagna layered with roasted sweet potatoes, pumpkin purée, and carrots  enriched with creamy feta, crunchy walnuts, and finished with a drizzle of cranberry-honey glaze for a festive and flavorful twist.


Ingredients

9 lasagna sheets (regular or oven-ready)

2 cups sweet potato, thinly sliced

2 cups pumpkin purée

1 cup carrots, grated

2 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 tsp dried thyme

1/2 tsp nutmeg

Salt and pepper, to taste

1 cup ricotta cheese

1 cup crumbled feta cheese

1/2 cup chopped walnuts

1 cup shredded mozzarella cheese

2 tbsp honey

2 tbsp cranberry sauce

Fresh parsley, for garnish


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until soft and fragrant.

3. Add grated carrots, thyme, nutmeg, salt, and pepper. Cook for 3–4 minutes, then remove from heat.

4. In a small bowl, mix pumpkin purée with ricotta cheese until smooth.

5. Whisk together honey and cranberry sauce to make the glaze; set aside.

6. Spread a thin layer of pumpkin mixture on the bottom of the baking dish.

7. Layer lasagna sheets, sweet potato slices, carrot mixture, feta, and walnuts.

8. Repeat the layers until ingredients are used, finishing with pumpkin mixture on top.

9. Sprinkle mozzarella over the final layer.

10. Cover with foil and bake for 30 minutes. Remove foil and bake another 10–15 minutes, until golden and bubbly.

11. Drizzle with cranberry-honey glaze and garnish with fresh parsley before serving.

Notes

You can substitute butternut squash for pumpkin if desired.

Add a handful of spinach or kale for extra greens.

This lasagna tastes even better the next day as the flavors meld together.
