Ingredients
2 medium sweet potatoes, sliced into 1/4-inch rounds
4 oz brie cheese, cut into small pieces
1/4 cup fresh or dried cranberries
1/4 cup pecans, toasted and chopped
1 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
1 tsp fresh thyme leaves (optional)
Instructions
1. Preheat oven to 400°F (200°C)
2. Line a baking sheet with parchment paper
3. Pat sweet potato rounds dry and toss with olive oil, salt, and pepper
4. Arrange rounds in a single layer on baking sheet
5. Roast 15–20 minutes until tender, flipping halfway
6. Top each round with brie and cranberries
7. Return to oven for 3–5 minutes until brie softens
8. Garnish with toasted pecans and thyme, serve warm
Notes
Store leftovers in an airtight container for up to 3 days
Reheat in oven at 350°F (175°C) for 5–7 minutes to restore crispiness
