Description
These hearty Tex-Mex Enchiladas are loaded with seasoned beef, melty cheese, and smothered in rich enchilada sauce a comforting dish that’s full of bold flavor and easy to make any night of the week.
Ingredients
1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning
1/4 cup water
8 small flour or corn tortillas
2 cups enchilada sauce (red or green)
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
1 tbsp olive oil
Fresh cilantro, chopped (for garnish)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet over medium heat, add olive oil, onion, and garlic. Cook until softened.
3. Add ground beef and cook until browned. Drain excess fat.
4. Stir in taco seasoning and water; simmer for 2–3 minutes until thickened.
5. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
6. Fill each tortilla with beef mixture and a small handful of cheese, then roll up tightly.
7. Place rolled tortillas seam-side down in the dish.
8. Pour remaining enchilada sauce evenly over the top and sprinkle with remaining cheese.
9. Bake uncovered for 20 minutes until hot and bubbly.
10. Garnish with cilantro and serve with sour cream or avocado.
Notes
For a spicier version, mix in diced jalapeños or hot sauce.
You can substitute ground turkey or shredded chicken for the beef.
Great with Mexican rice and refried beans on the side.
