This Thanksgiving Leftovers Salad turns your holiday extras into a fresh, hearty, and colorful meal featuring turkey, roasted veggies, cranberry sauce, and a maple Dijon dressing over crisp greens.
Ingredients
4 cups mixed salad greens (spinach, arugula, or romaine)
1 ½ cups cooked turkey, shredded or cubed
1 cup roasted sweet potatoes or butternut squash
½ cup cooked green beans, chopped
¼ cup cranberry sauce or dried cranberries
½ cup crumbled feta or goat cheese
¼ cup chopped pecans or walnuts, toasted
½ cup cooked stuffing croutons (optional)
For the Dressing:
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
