Description

Ingredients

2 cups cooked pasta (penne, rotini, or farfalle), cooled

1½ cups cooked chicken breast, diced or shredded

1 cup cherry tomatoes, halved

½ cup diced cucumber

¼ cup red onion, finely chopped

½ cup shredded cheddar or mozzarella (optional)

2 tablespoons chopped fresh parsley or basil

For the Dressing:

¼ cup olive oil

2 tablespoons red wine vinegar or lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and black pepper, to taste


Instructions

1. Cook pasta according to package directions. Drain and rinse under cold water. Set aside to cool.

2. In a large bowl, combine pasta, chicken, tomatoes, cucumber, onion, cheese (if using), and herbs.

3. In a small bowl or jar, whisk together olive oil, vinegar or lemon juice, Dijon mustard, garlic, salt, and pepper.

4. Pour the dressing over the salad. Toss gently to combine and coat all ingredients.

5. Serve immediately or chill for 30 minutes to let flavors develop.

Notes

Use rotisserie chicken for a quick shortcut.

Add avocado or olives for extra creaminess or tang.
