Description
A bold, refreshing salad made with cucumbers, herbs, chili, and sesame dressing — light yet full of flavor.
Ingredients
2 cucumbers, julienned
3 green onions, sliced
1 bunch cilantro, chopped
1 bunch parsley, chopped
2 red chili peppers, thinly sliced
2 tbsp sesame oil
1 tbsp soy sauce or tamari
1 tbsp vinegar
2 garlic cloves, minced
Optional: 200g shrimp, chicken, or tofu
Instructions
1. Prepare vegetables by slicing thinly.
2. Whisk sesame oil, soy sauce, vinegar, garlic, and chili flakes to make dressing.
3. Cook optional protein (shrimp, chicken, or tofu).
4. Toss vegetables with dressing.
5. Add protein and mix well.
6. Let rest 5 minutes before serving.
Notes
Adjust chili to your spice level.
Store leftovers for 2 days max.
