Description
A smooth, velvety bistro-style tomato bisque made with roasted tomatoes, cream, and aromatic herbs for an elegant yet comforting soup.
Ingredients
2 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp tomato paste
2 cans (14.5 oz each) crushed tomatoes
1 cup vegetable broth
1 tsp sugar
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 cup heavy cream
Salt and pepper to taste
Fresh basil and croutons for garnish
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add onion and garlic; sauté until softened and fragrant.
3. Stir in tomato paste and cook for 1 minute.
4. Add crushed tomatoes, broth, sugar, basil, and thyme.
5. Simmer for 20 minutes, stirring occasionally.
6. Blend the soup until smooth using an immersion blender.
7. Stir in heavy cream and season with salt and pepper.
8. Simmer 5 minutes more, then serve with fresh basil and croutons.
Notes
Roasting the tomatoes before adding them enhances flavor.
Use coconut milk for a dairy-free variation.
Pair with grilled cheese or a crusty baguette.
