Description
A savory tomato pie recipe with heirloom tomatoes, creamy cheese, and fresh herbs. Perfectly comforting and easy to customize.
Ingredients
2–3 large heirloom or Roma tomatoes
1/2 tsp salt
1 pre-baked pie crust
1/2 cup shredded mozzarella
1/4 cup grated parmesan
1/3 cup Greek yogurt or mayo
Fresh basil leaves
1/4 tsp garlic powder
Black pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. Slice tomatoes and sprinkle with salt. Let drain for 15 minutes.
3. Blot tomatoes with paper towels to remove moisture.
4. Pre-bake pie crust for 10 minutes and set aside.
5. Layer tomatoes, herbs, and cheese in crust.
6. Spread yogurt or mayo on top as final layer.
7. Bake for 30–35 minutes until golden and bubbly.
8. Cool for 10–15 minutes before slicing and serving.
Notes
Use breadcrumbs at base of crust to absorb moisture.
Try adding olives, roasted peppers, or red chili flakes for a twist.
Store leftovers in fridge and reheat in oven.
