Ingredients
1 cup rolled oats
1/2 cup flour (or GF alternative)
1/2 cup chopped almonds
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/3 cup dark chocolate chips
1/3 cup honey or maple syrup
1/4 cup melted coconut oil
1 egg (or flax egg)
1 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C).
2. Mix oats, flour, baking powder, salt.
3. Whisk honey, oil, and egg.
4. Fold wet into dry.
5. Stir in trail mix.
6. Scoop dough into rounds.
7. Bake 10–12 minutes.
8. Cool before serving.
Notes
Store in airtight container for 5 days.
