These Tuna Cucumber Pinwheels are a quick and healthy snack or lunch idea. Creamy tuna salad paired with crisp cucumber makes for a refreshing bite that’s both satisfying and light great for meal prep or parties!
Ingredients
2 large flour tortillas (10-inch)
1 (5 oz) can tuna, drained
3 tbsp mayonnaise
1 tsp Dijon mustard
1 tbsp lemon juice
1/2 cup finely chopped cucumber
2 tbsp finely chopped red onion
Salt and pepper to taste
1 cup fresh spinach leaves
Instructions
1. In a small bowl, mix tuna, mayonnaise, Dijon mustard, lemon juice, cucumber, red onion, salt, and pepper until well combined.
2. Lay out the tortillas and place spinach leaves evenly over each.
3. Spread half of the tuna mixture over each tortilla.
4. Roll up tightly into logs.
5. Wrap in plastic wrap and refrigerate for at least 30 minutes.
6. Slice into 1-inch pinwheels and serve chilled.
Notes
Use whole-wheat or spinach tortillas for extra color and fiber.
Add a few slices of avocado for creaminess.
