Description

A delightful Tuna Pasta Salad packed with fresh vegetables and a creamy dressing, perfect for quick lunches and picnics.


Ingredients

  • 12 ounces short pasta (rotini, shells, or elbow macaroni)
  • 2 cans tuna, drained well
  • 3/4 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 celery stalks, finely chopped
  • 1/4 cup red onion, finely chopped
  • 3/4 cup peas, thawed if frozen
  • 1/4 cup chopped dill pickles or 2 tablespoons relish
  • 1 tablespoon fresh dill or parsley, chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Once boiling, add the short pasta of your choice. Cook according to the package instructions until the pasta is just tender, about 8 to 10 minutes.
  2. Drain and Rinse: When the pasta is ready, drain it in a colander and rinse it under cool water to halt the cooking process and cool it down.
  3. Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, Greek yogurt or sour cream, lemon juice, Dijon mustard, salt, and black pepper.
  4. Add the Tuna: Open the cans of tuna and drain the liquid well. Gently add the flaked tuna into the mixing bowl.
  5. Incorporate Veggies and Herbs: Finely chop the celery and red onion, then add them to the bowl along with the peas and dill pickles or relish.
  6. Combine with Pasta: Fold in the cooled pasta gently using a spatula.
  7. Adjust Seasoning: Taste the salad and adjust seasoning if needed.
  8. Chill: Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes.
  9. Serve: Dish the salad onto plates and garnish with fresh herbs or a squeeze of lemon juice as desired.

Notes

For an extra kick, add a pinch of cayenne pepper into the dressing.
