Ingredients
1 (5 oz) can tuna, drained
1/2 cup cottage cheese
1 tbsp Dijon mustard
1 tbsp lemon juice
1 celery stalk, finely chopped
2 tbsp red onion, finely chopped
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
4 slices whole-grain or sourdough bread, toasted
Optional toppings: sliced avocado, tomato, or microgreens
Instructions
1. In a bowl, combine tuna, cottage cheese, Dijon mustard, and lemon juice.
2. Mix until creamy and well combined.
3. Stir in celery, red onion, and parsley.
4. Season with salt and black pepper to taste.
5. Toast bread slices until golden.
6. Spoon tuna salad evenly over each toast slice.
7. Top with avocado, tomato, or microgreens if desired. Serve immediately.
