Description
A vibrant and hearty Turkey Taco Salad made with lean ground turkey, crisp romaine, and all your favorite taco toppings a healthy, flavorful twist on taco night!
Ingredients
1 lb ground turkey
1 tbsp olive oil
1 packet (or 2 tbsp) taco seasoning
1/4 cup water
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup canned corn, drained
1/2 cup black beans, rinsed and drained
1/2 cup shredded cheddar cheese
1/4 cup diced red onion
1 avocado, sliced
1/4 cup Greek yogurt or sour cream
1/4 cup salsa
Tortilla chips, crushed, for topping
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add ground turkey and cook, breaking it apart, until browned.
3. Stir in taco seasoning and water; simmer for 2–3 minutes until thickened.
4. In a large bowl, layer romaine lettuce, tomatoes, corn, beans, and onions.
5. Top with cooked turkey, cheese, avocado slices, and crushed tortilla chips.
6. Drizzle with salsa and a dollop of Greek yogurt or sour cream.
7. Serve immediately and enjoy!
Notes
For extra crunch, use baked tortilla strips instead of chips.
Make it ahead: store turkey separately and assemble just before serving.
Swap ground turkey for chicken or plant-based crumbles for variation.
