A rich, silky vegan chocolate mousse pie with a crisp cookie crust and ultra-creamy chocolate filling completely dairy-free, egg-free, and irresistibly decadent.
Ingredients
1 1/2 cups chocolate sandwich cookie crumbs (vegan)
5 tbsp coconut oil, melted
1 1/2 cups full-fat coconut milk (chilled)
1 cup dairy-free dark chocolate chips
1/4 cup maple syrup
1 tsp vanilla extract
1/4 tsp salt
Instructions
1. Mix cookie crumbs with melted coconut oil and press firmly into a pie dish.
2. Refrigerate crust for 20 minutes to set.
3. Melt dairy-free chocolate chips until smooth and let cool slightly.
4. Scoop solid coconut cream from chilled coconut milk into a bowl.
5. Add maple syrup, vanilla extract, and salt; beat until smooth and fluffy.
6. Gently fold melted chocolate into the coconut cream until fully combined.
7. Pour mousse into prepared crust and smooth the top.
8. Refrigerate for at least 4 hours or until set.
9. Slice and serve chilled.
Notes
Use high-quality dark chocolate for best flavor.
Chill coconut milk overnight for easiest separation.
Top with berries or coconut whipped cream if desired.
