Instructions
- Preheat the oven to 350°F (175°C).
- Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, incorporating fully before adding the next.
- Mix in the lime zest and fresh lime juice.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in another bowl.
- Combine the dry ingredients with the wet mixture gradually.
- Fold in the white chocolate chips gently.
- Shape balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
Notes
For an extra touch, sprinkle a little powdered sugar on top and serve with cold milk or iced drinks.
