A delightful twist on the classic Italian dessert featuring creamy mascarpone, fresh raspberries, and sweet white chocolate.
Ingredients

- 4 cups raspberries, fresh or frozen
- ½ cup water
- ¾ cup granulated sugar (divided)
- 1 tablespoon lemon juice
- 1 ½ cup heavy cream
- 16 ounces mascarpone cheese
- ¾ cup raspberry syrup (from above)
- 1 teaspoon vanilla
- 1 (7 oz) package Savoiardi ladyfingers (about 24)
- 1 ounce good-quality white chocolate
Instructions
- In a small saucepan, combine the raspberries, ½ cup water, ¾ cup sugar, and lemon juice. Cook over medium heat until it begins to boil, stirring gently to dissolve the sugar and break down the raspberries.
- Reduce heat and let simmer for 10 minutes. Strain through a fine mesh strainer, discarding the solids, and allow to cool.
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, blend the mascarpone with the remaining ¾ cup sugar until smooth.
- Fold the whipped cream into the mascarpone mixture until combined. Stir in the cooled raspberry syrup and vanilla.
- Dip each ladyfinger briefly in the raspberry syrup and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers and add a layer of raspberries. Repeat with another layer of ladyfingers, mascarpone, and top with raspberries.
- Grate white chocolate over the top, cover with plastic wrap, and chill for at least 4 hours or overnight.
- When ready to serve, slice and garnish with extra raspberries or whipped cream if desired.
Notes
Best served cold; chill for optimal flavor. Customize with other fruits or flavored whipped cream.
