White Chocolate Raspberry Tiramisu

Description

A delightful twist on the classic Italian dessert featuring creamy mascarpone, fresh raspberries, and sweet white chocolate.


Ingredients

  • 4 cups raspberries, fresh or frozen
  • ½ cup water
  • ¾ cup granulated sugar (divided)
  • 1 tablespoon lemon juice
  • 1 ½ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup raspberry syrup (from above)
  • 1 teaspoon vanilla
  • 1 (7 oz) package Savoiardi ladyfingers (about 24)
  • 1 ounce good-quality white chocolate

Instructions

  1. In a small saucepan, combine the raspberries, ½ cup water, ¾ cup sugar, and lemon juice. Cook over medium heat until it begins to boil, stirring gently to dissolve the sugar and break down the raspberries.
  2. Reduce heat and let simmer for 10 minutes. Strain through a fine mesh strainer, discarding the solids, and allow to cool.
  3. In a large bowl, whip the heavy cream until soft peaks form.
  4. In another bowl, blend the mascarpone with the remaining ¾ cup sugar until smooth.
  5. Fold the whipped cream into the mascarpone mixture until combined. Stir in the cooled raspberry syrup and vanilla.
  6. Dip each ladyfinger briefly in the raspberry syrup and layer them in a serving dish.
  7. Spread half of the mascarpone mixture over the ladyfingers and add a layer of raspberries. Repeat with another layer of ladyfingers, mascarpone, and top with raspberries.
  8. Grate white chocolate over the top, cover with plastic wrap, and chill for at least 4 hours or overnight.
  9. When ready to serve, slice and garnish with extra raspberries or whipped cream if desired.

Notes

Best served cold; chill for optimal flavor. Customize with other fruits or flavored whipped cream.
