Description
A cozy, creamy soup that turns classic white lasagna into a comforting bowl filled with tender chicken, spinach, lasagna noodles, and rich cheesy flavor in every bite.
Ingredients
1 tbsp olive oil
1 lb boneless, skinless chicken breasts (cubed or shredded)
1 small onion, diced
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
6 cups chicken broth
8 lasagna noodles, broken into pieces
1 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach leaves
Fresh basil or parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken and cook until lightly browned and cooked through. Remove and set aside.
3. In the same pot, add onion and cook until soft, then stir in garlic and cook another minute.
4. Season with salt, pepper, Italian seasoning, and red pepper flakes.
5. Pour in chicken broth and bring to a simmer.
6. Add broken lasagna noodles and cook until tender, about 10 minutes.
7. Reduce heat to low, return chicken to the pot, and stir in heavy cream.
8. In a small bowl, combine ricotta, mozzarella, and Parmesan cheese.
9. Stir cheeses into the soup until melted and creamy.
10. Add spinach and cook just until wilted.
11. Taste and adjust seasoning as needed.
12. Serve warm, garnished with fresh basil or parsley.
Notes
For extra flavor, use rotisserie chicken instead of raw chicken.
Add sautéed mushrooms for a heartier soup.
Serve with crusty bread to soak up the creamy broth.
