Ingredients

1 cup wild rice

2 cups broccoli florets

1 small onion, diced

2 garlic cloves, minced

2 tbsp olive oil

2 tbsp flour (or GF substitute)

2 cups milk

2 cups vegetable broth

2 cups shredded cheddar cheese

1/2 tsp paprika

Salt & pepper to taste


Instructions

1. Preheat oven to 375°F (190°C).

2. Rinse wild rice.

3. Sauté onion and garlic in olive oil.

4. Add flour, then whisk in milk and broth.

5. Stir in rice, season, and simmer 10 minutes.

6. Fold in broccoli and half the cheese.

7. Top with remaining cheese.

8. Bake 35–40 minutes until bubbly.

9. Rest 5 minutes before serving.

Notes

Use fresh broccoli for best texture.

For vegan option, swap in plant-based cheese and oat milk.
