Ingredients
4 cups chopped kale
1 apple, diced
1 pear, diced
1/2 cup pomegranate seeds
1/2 cup shredded carrots
1/4 cup sliced radishes
1/3 cup toasted pecans or walnuts
1/3 cup crumbled feta or goat cheese
3 tbsp white balsamic vinegar
2 tbsp olive oil
1 tsp Dijon mustard
1 tbsp honey or maple syrup
Salt and pepper to taste
Instructions
1. Wash and dry all produce.
2. Chop apples, pears, and greens.
3. Toast nuts in a skillet.
4. Whisk dressing ingredients together.
5. Combine greens, fruits, and veggies in a bowl.
6. Top with nuts and cheese.
7. Drizzle dressing and toss gently.
8. Serve immediately.

For vegan option: use maple syrup and dairy-free cheese.
