Ingredients
1 cup (240 g) Greek yogurt (full-fat works best)
4 large eggs
1 ½ cups (150 g) almond flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon olive oil or melted butter (for greasing the pan)
Optional: 1 teaspoon herbs or spices (like garlic powder, rosemary, or cinnamon)
Instructions
1. Preheat your oven to 350°F (175°C). Grease a loaf pan with olive oil or butter and line with parchment paper for easy removal.
2. In a large bowl, whisk together Greek yogurt and eggs until smooth and well combined.
3. In a separate bowl, mix almond flour, baking powder, salt, and any optional herbs or spices.
4. Slowly fold the dry ingredients into the wet mixture until a smooth, thick batter forms.
5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
6. Allow the bread to cool for 10–15 minutes in the pan, then remove and let cool completely on a wire rack. Slice and enjoy plain, toasted, or with your favorite low-carb toppings.
