Description

Delicious and healthy Zesty Lemon Bliss Balls made with almond flour and shredded coconut, perfect for a quick snack or dessert.


Ingredients

  • 1 1/4 cups Almond flour
  • 1 cup Unsweetened shredded coconut
  • 1/4 cup Honey (or maple syrup for a vegan version)
  • 2 tbsp Fresh lemon zest
  • 3 tbsp Fresh lemon juice
  • 1 tsp Vanilla extract
  • 1/8 tsp Turmeric (for natural yellow color)
  • A pinch of salt
  • Extra shredded coconut (for rolling)

Instructions

  1. Combine all ingredients in a food processor and pulse until a thick, sticky dough forms.
  2. Shape the dough into bite-sized balls, rolling them between clean palms.
  3. Coat the balls in extra shredded coconut until fully covered.
  4. Set the coated bliss balls in a tray and refrigerate for at least 2 hours to firm up.
  5. Store in an airtight container in the refrigerator for up to 14 days or freeze for up to 3 months.
