  • 1/2 cup diced cucumber
  • 1 avocado, cubed
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp sliced jalapeños
  • Zest of 1/2 lemon

Instructions

  1. Heat a tablespoon of olive oil in a skillet over medium heat.
  2. Add cooked shredded chicken to the skillet and spread it out evenly.
  3. Season the chicken with lemon pepper, garlic powder, and salt; cook for about 5-7 minutes.
  4. In a medium bowl, mix cottage cheese with ranch dressing and cracked black pepper.
  5. Spoon the cottage cheese mixture into serving bowls.
  6. Add the warm lemon pepper chicken on top of the cottage cheese.
  7. Distribute diced cucumbers over the chicken.
  8. Scatter avocado cubes over the top.
