Ingredients

- 3 heaping cups frozen diced mango (or fresh)
- 1 cup cashews (soaked for 2 to 3 hours)
- ½ cup unsweetened almond milk (or soy or coconut milk, plus more if needed)
- 4 soft medjool dates (pits removed)
- ½ teaspoon cinnamon
- Pinch sea or Himalayan salt
Instructions
- Prepare the cashews: Soak cashews in water for 2 to 3 hours, then drain.
- Blend the ingredients: In a blender, combine soaked cashews, frozen mango, almond milk, medjool dates, cinnamon, and salt.
- Blend until smooth: Blend on high speed until creamy, adding more almond milk if necessary.
- Serve or store: Divide mousse into bowls and garnish as desired. Store in the fridge for up to 3 days.
