A quick and healthy vegan dessert made with creamy cashews and sweet mango, perfect for any occasion.


Ingredients

  • 3 heaping cups frozen diced mango (or fresh)
  • 1 cup cashews (soaked for 2 to 3 hours)
  • ½ cup unsweetened almond milk (or soy or coconut milk, plus more if needed)
  • 4 soft medjool dates (pits removed)
  • ½ teaspoon cinnamon
  • Pinch sea or Himalayan salt

Instructions

  1. Prepare the cashews: Soak cashews in water for 2 to 3 hours, then drain.
  2. Blend the ingredients: In a blender, combine soaked cashews, frozen mango, almond milk, medjool dates, cinnamon, and salt.
  3. Blend until smooth: Blend on high speed until creamy, adding more almond milk if necessary.
  4. Serve or store: Divide mousse into bowls and garnish as desired. Store in the fridge for up to 3 days.

For a different twist, add lime juice or try substituting other fruits.
