- 1 cup quinoa, rinsed
- 2 cups water
- 2 apples, diced

Instructions
- Cook the quinoa: In a saucepan, combine the rinsed quinoa with 2 cups of water. Bring it to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
- Prepare the ingredients: Dice the apples, chop the walnuts, and slice the green onions. Crumble the feta cheese if using.
- Combine the salad: In a large bowl, mix the cooled quinoa, diced apples, walnuts, cranberries, green onions, and feta cheese.
- Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Dress the salad: Pour the dressing over the salad and toss gently to coat all ingredients.
- Serve: Enjoy the salad chilled or at room temperature. Store leftovers in an airtight container for 3 to 4 days.
