Ingredients

  • 2 cups water
  • 2 apples, diced

  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa: In a saucepan, combine the rinsed quinoa with 2 cups of water. Bring it to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
  2. Prepare the ingredients: Dice the apples, chop the walnuts, and slice the green onions. Crumble the feta cheese if using.
  3. Combine the salad: In a large bowl, mix the cooled quinoa, diced apples, walnuts, cranberries, green onions, and feta cheese.
  4. Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Dress the salad: Pour the dressing over the salad and toss gently to coat all ingredients.
  6. Serve: Enjoy the salad chilled or at room temperature. Store leftovers in an airtight container for 3 to 4 days.
