Delightful muffins that combine the sweetness of ripe bananas and the richness of chocolate.
Ingredients

- 2 ripe bananas
- 1/2 cup melted butter
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a muffin tin with paper liners.
- Mash the bananas in a large bowl until mostly smooth.
- Add the melted butter to the mashed bananas and mix well.
- Mix in the sugar, then the egg, followed by the vanilla extract.
- Incorporate baking soda and salt into the mixture and stir.
- Add the flour gradually until just incorporated.
- Fold in the chocolate chips and walnuts gently.
- Spoon the batter into each muffin cup about two-thirds full.
- Bake for 18-20 minutes until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack.
Notes
Serve warm with butter or honey. They can also be enjoyed with whipped cream or ice cream.
