Description

Delightful muffins that combine the sweetness of ripe bananas and the richness of chocolate.


Ingredients

  • 2 ripe bananas
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin with paper liners.
  3. Mash the bananas in a large bowl until mostly smooth.
  4. Add the melted butter to the mashed bananas and mix well.
  5. Mix in the sugar, then the egg, followed by the vanilla extract.
  6. Incorporate baking soda and salt into the mixture and stir.
  7. Add the flour gradually until just incorporated.
  8. Fold in the chocolate chips and walnuts gently.
  9. Spoon the batter into each muffin cup about two-thirds full.
  10. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  11. Cool in the tin for a few minutes, then transfer to a wire rack.

Notes

Serve warm with butter or honey. They can also be enjoyed with whipped cream or ice cream.
