Description

A hearty Beef Enchilada Casserole combining classic flavors in a convenient casserole format, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas, cut into strips
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Mix the enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper into the skillet and heat through.
  4. Layer half of the tortilla strips in a greased 9×13 inch baking dish, followed by half of the beef mixture and half of the cheese.
  5. Repeat the layers with remaining tortilla strips, beef mixture, and cheese.
  6. Bake covered with foil for 20 minutes, then remove the foil and bake for an additional 10 minutes until cheese is melted and bubbly.
  7. Cool for a few minutes before serving.

Notes

Serve with toppings like sour cream, guacamole, and fresh cilantro for added flavor.
