- 1 lb ground beef
- 1 can (15 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 2 cups cooked rice
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas, cut into strips
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Mix the enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper into the skillet and heat through.
- Layer half of the tortilla strips in a greased 9×13 inch baking dish, followed by half of the beef mixture and half of the cheese.
- Repeat the layers with remaining tortilla strips, beef mixture, and cheese.
- Bake covered with foil for 20 minutes, then remove the foil and bake for an additional 10 minutes until cheese is melted and bubbly.
- Cool for a few minutes before serving.
Notes
Serve with toppings like sour cream, guacamole, and fresh cilantro for added flavor.
