Delightful pastry rings filled with blueberry and creamy vanilla, perfect for breakfast, brunch or dessert.

- 1 package of puff pastry (two sheets, thawed)
- 1 cup fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 egg (for egg wash)
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- A pinch of salt
- Optional: powdered sugar for dusting
Instructions
- In a medium saucepan, combine blueberries, granulated sugar, lemon juice, and vanilla extract. Cook over medium heat, stirring until juices release, about 5-7 minutes.
- In a small bowl, mix cornstarch with water to make a slurry. Add to the blueberry mixture and cook for another 2-3 minutes until thick.
- Preheat oven to 400°F (200°C). Roll out puff pastry and cut out circles (4 inches in diameter).
- Cut out centers using a smaller cutter (2 inches) to form rings. Place on a parchment-lined baking sheet.
- Brush pastry rings with egg wash.
- Bake for 15-20 minutes until golden brown and puffed. Let cool on a wire rack.
- Whip heavy cream and gradually add powdered sugar, vanilla extract, and salt until stiff peaks form.
- Dollop or pipe vanilla cream into the centers of cooled pastry rings and top with blueberry filling.
- Dust with powdered sugar if desired before serving.
Notes
For the best texture, serve the pastries fresh. Store in an airtight container for up to two days or freeze for up to a month.
