Description

A vibrant and refreshing Bow Tie Pasta Salad that brings together a variety of fresh flavors, perfect for potlucks and picnics.


Ingredients

  • 12 ounces bow tie pasta, dry
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 cup bocconcini cheese, halved
  • 1 cup spinach, packed, finely chopped
  • 1/2 cup basil, finely chopped
  • 3 tablespoons pesto
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil a large pot of salted water. Add the bow tie pasta and cook according to package instructions until al dente, about 10-12 minutes.
  2. Drain the pasta in a colander and let it cool. You can rinse it briefly under cold water to stop the cooking process.
  3. Combine the cooled pasta, halved cherry tomatoes, diced red onion, halved bocconcini cheese, finely chopped spinach, and basil in a large mixing bowl.
  4. Whisk together the pesto, olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Pour the dressing over the pasta mixture and toss until well-coated. Adjust seasoning if needed.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to enhance the flavors.

Notes

Consider garnishing with fresh basil leaves or additional bocconcini before serving.
