- 1/3 cup unsalted butter
- 1/2 red bell pepper (seeded and diced)
- 1/2 green bell pepper (seeded and diced)
- 1/2 yellow onion (diced)
- 3 1/4 cups low-sodium chicken broth
- 1 1/4 teaspoons Kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground thyme
- 1 teaspoon ground paprika
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 1/2 cups long-grain white rice
Instructions
- Melt the unsalted butter in a medium-sized saucepan over medium-high heat until it begins to bubble.
- Add the diced red and green bell peppers and yellow onion to the saucepan, stirring and sautéing for about 5-7 minutes until tender.
- Pour in the chicken broth, then add Kosher salt, garlic powder, ground thyme, ground paprika, black pepper, and the bay leaf. Stir and bring to a boil.
- Add the long-grain white rice, stir well, and cover the saucepan with a lid.
- Reduce the heat to a simmer and cook for about 20-25 minutes.
- Remove from heat, and let sit covered for another 10 minutes.
- Fluff the rice with a fork, remove the bay leaf, and serve warm.
Notes
For added flavor, serve with hot sauce or pair with grilled chicken, shrimp, or sausage. Garnish with fresh parsley or green onions for presentation.
