- 20 oz cheese tortellini, uncooked (approximately 5 cups uncooked)
- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Balsamic glaze (optional)
Instructions
- Cook the Tortellini: Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually around 2-3 minutes, until firm to the bite.
- Prep Other Ingredients: While the tortellini cooks, halve the cherry tomatoes, chop the spinach and basil, and mince the garlic cloves.
- Cool the Tortellini: Strain the cooked tortellini in a colander, then rinse briefly under cool running water to stop the cooking process.
- Combine Ingredients: In a medium to large bowl, add the cooled tortellini, chopped spinach, halved cherry tomatoes, mozzarella pearls, and minced garlic.
- Dress the Salad: Pour the olive oil and balsamic vinegar over the salad. Sprinkle with Italian seasoning, salt, and pepper, then toss everything together gently.
- Chill: Allow the salad to chill in the refrigerator for at least 30 minutes.
- Final Touches: Just before serving, give the salad another toss and drizzle with balsamic glaze if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. Add more olive oil or balsamic vinegar before serving if needed.
