Ingredients

  • 10 oz cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 34 garlic cloves, minced
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Balsamic glaze (optional)

Instructions

  1. Cook the Tortellini: Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually around 2-3 minutes, until firm to the bite.
  2. Prep Other Ingredients: While the tortellini cooks, halve the cherry tomatoes, chop the spinach and basil, and mince the garlic cloves.
  3. Cool the Tortellini: Strain the cooked tortellini in a colander, then rinse briefly under cool running water to stop the cooking process.
  4. Combine Ingredients: In a medium to large bowl, add the cooled tortellini, chopped spinach, halved cherry tomatoes, mozzarella pearls, and minced garlic.
  5. Dress the Salad: Pour the olive oil and balsamic vinegar over the salad. Sprinkle with Italian seasoning, salt, and pepper, then toss everything together gently.
  6. Chill: Allow the salad to chill in the refrigerator for at least 30 minutes.
  7. Final Touches: Just before serving, give the salad another toss and drizzle with balsamic glaze if desired.
