Description

A delightful combination of moist banana bread and comforting carrot cake spices, topped with cream cheese frosting.


Ingredients

  • 2 ripe bananas
  • 1 cup grated carrots
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • Cream cheese frosting (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Add the grated carrots, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract to the bananas and mix until well combined.
  4. Whisk the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  5. Fold the dry mixture into the wet mixture gently until just combined.
  6. Incorporate the walnuts or pecans if using.
  7. Pour the batter into the prepared loaf pan and bake for 60 to 70 minutes.
  8. Cool for 10-15 minutes in the pan, then transfer to a wire rack and frost with cream cheese frosting once completely cool.

Notes

Great served warm with coffee or tea, and can be stored wrapped at room temperature or frozen for later enjoyment.
