Instructions

  1. Start by cracking the eggs into a medium-sized mixing bowl.
  2. Add the cottage cheese to the bowl with the eggs. Season with salt and pepper, then whisk together until combined.
  3. Heat a non-stick skillet over medium-low heat, adding the butter or oil to melt.
  4. Carefully pour the egg and cottage cheese mixture into the skillet and gently turn with a spatula.
  5. Let cook without constant stirring until soft curds form, then remove from heat just before fully set.
  6. Transfer the scrambled eggs to a plate and garnish with chopped chives if desired.
