Description

A delightful dish featuring crispy edges, fluffy insides, and creamy whipped feta, elevated by sweet and spicy chili honey.


Ingredients

  • 1 kg baby potatoes
  • 3 tbsp olive oil
  • Salt & black pepper
  • 200g feta cheese
  • 100g Greek yogurt
  • 2 tbsp olive oil (for the feta mixture)
  • 1 garlic clove
  • 4 tbsp honey
  • 1 tsp red chili flakes
  • Fresh oregano or thyme

Instructions

  1. Boil the baby potatoes in a large pot of salted water for 15 to 20 minutes until fork-tender.
  2. Drain and place the potatoes onto a lined baking tray, allowing them to steam dry for about 5 minutes.
  3. Preheat your oven to 220°C (425°F).
  4. Smash each potato with a glass to flatten while still holding together.
  5. Brush the smashed potatoes with olive oil and season with salt and black pepper.
  6. Bake in the preheated oven for 30 to 35 minutes until crispy and golden brown.
  7. Prepare the whipped feta by blending feta cheese, Greek yogurt, olive oil, and garlic until fluffy.
  8. Make the chili honey by warming honey and stirring in red chili flakes for 2 minutes.
  9. Assemble by dolloping whipped feta on the potatoes, drizzling with chili honey, and adding fresh herbs.

Notes

For best texture and flavor, serve immediately. Leftovers can be stored in an airtight container for up to 3 days.
