A creamy and smooth Italian dessert enhanced with a refreshing summer berry compote, perfect for gatherings or dinner parties.

- 2 cups heavy cream
- 1/2 cup milk
- 1/2 cup granulated sugar
- 1 tablespoon gelatin (approximately 1 packet)
- 2 teaspoons vanilla extract
- A pinch of salt
- For the Summer Berry Compote:
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Bloom the Gelatin: In a small bowl, combine the gelatin with 3 tablespoons of cold water. Allow it to sit for about 5-10 minutes until it becomes thick.
- Heat the Cream Mixture: In a saucepan, combine the heavy cream, milk, sugar, and a pinch of salt. Cook over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
- Add the Gelatin: Once the cream mixture is hot, add the bloomed gelatin and stir until it completely dissolves.
- Add Vanilla: Stir in the vanilla extract and mix well.
- Pour and Set: Pour the mixture into individual serving dishes. Cool at room temperature for about 30 minutes, then cover and refrigerate for at least 4 hours until set.
- Make the Compote: In a medium saucepan, combine the berries, sugar, lemon juice, and vanilla extract. Cook over medium heat for about 5-7 minutes until the berries break down. Remove from heat and cool completely.
- Serve: Once the panna cotta has set, top with a generous spoonful of berry compote.
Notes
Best served chilled. Can garnish with mint or powdered sugar.
