- 1 ripe mango, diced
- 1 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeño, minced
- Juice of 1 lime
- Salt and pepper to taste

Instructions
- Preheat your grill or skillet over medium heat. Brush salmon fillets with olive oil and season with salt and pepper.
- Cook the salmon on the grill or skillet for 4-5 minutes on each side, until cooked through (internal temperature reaches 145°F).
- Mix together diced mango, red onion, bell pepper, jalapeño, and lime juice in a bowl for the mango salsa. Season to taste.
- Serve the cooked salmon topped with mango salsa, warm or at room temperature.
