Description

Ingredients

  • 2 salmon fillets
  • 1 ripe mango, diced
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or skillet over medium heat. Brush salmon fillets with olive oil and season with salt and pepper.
  2. Cook the salmon on the grill or skillet for 4-5 minutes on each side, until cooked through (internal temperature reaches 145°F).
  3. Mix together diced mango, red onion, bell pepper, jalapeño, and lime juice in a bowl for the mango salsa. Season to taste.
  4. Serve the cooked salmon topped with mango salsa, warm or at room temperature.
