Description

A light and airy dessert perfect for spring and summer, showcasing fresh strawberries in a delightful cake roll.

Ingredients

Scale
  • 1 cup fresh strawberries, pureed
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whipped cream
  • Additional strawberries for garnish

Instructions

  1. Preheat the oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare the baking pan: Grease a 15×10-inch baking pan with butter or cooking spray, then line with parchment paper.
  3. Beat the eggs and sugar: In a mixing bowl, crack the eggs and add granulated sugar. Beat on medium speed for about 5 minutes until thick and pale.
  4. Add vanilla and strawberry puree: Pour in vanilla extract and pureed strawberries into the egg mixture and mix on low speed until combined.
  5. Combine dry ingredients: Whisk together flour, baking powder, and salt in another bowl.
  6. Fold in dry ingredients: Gradually add the dry mixture to the wet mixture, folding gently with a spatula.
  7. Spread the batter: Pour the batter into the prepared baking pan and spread evenly.
  8. Bake the cake: Bake in the preheated oven for 12-15 minutes until lightly golden.
  9. Cool and roll: Let the cake cool for 5 minutes, then invert onto a powdered sugar-dusted towel and roll up while warm.
  10. Cool completely: Allow the rolled cake to cool for about 30 minutes wrapped in the towel.
  11. Unroll and fill: Carefully unroll the cake and spread whipped cream evenly, then add sliced strawberries on top.
  12. Roll it back up: Gently roll the cake back without the towel, keeping it tight but not too tight.
  13. Refrigerate: Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour.
  14. Serve: Slice the cake into pieces and garnish with fresh strawberries before serving.

Notes

Use fresh, ripe strawberries for the best flavor. Chill whipped cream for better stability when spreading.
