- 2 chicken breasts
- 1 cup rice or quinoa
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- For the marinade:
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- For the tzatziki sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Marinate the chicken by combining olive oil, lemon juice, dried oregano, salt, and pepper in a bowl. Add the chicken breasts and let it marinate for at least 30 minutes.
- Grill the chicken on medium heat for about 6 to 7 minutes on each side, or until the temperature reaches 165°F (75°C). Let it rest before slicing.
- Prepare rice or quinoa according to the package instructions, about 15-20 minutes. Fluff and set aside.
- Make the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
- Assemble the bowls by adding rice or quinoa, sliced grilled chicken, diced vegetables, and tzatziki sauce. Top with feta cheese.
- Serve immediately or refrigerate for later enjoyment.

For deeper flavor, marinate chicken longer. Customize toppings based on your preferences.
