Ingredients

  • 2 chicken breasts
  • 1 cup rice or quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • For the marinade:
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • For the tzatziki sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Marinate the chicken by combining olive oil, lemon juice, dried oregano, salt, and pepper in a bowl. Add the chicken breasts and let it marinate for at least 30 minutes.
  2. Grill the chicken on medium heat for about 6 to 7 minutes on each side, or until the temperature reaches 165°F (75°C). Let it rest before slicing.
  3. Prepare rice or quinoa according to the package instructions, about 15-20 minutes. Fluff and set aside.
  4. Make the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and salt in a bowl.
  5. Assemble the bowls by adding rice or quinoa, sliced grilled chicken, diced vegetables, and tzatziki sauce. Top with feta cheese.
  6. Serve immediately or refrigerate for later enjoyment.

Notes

For deeper flavor, marinate chicken longer. Customize toppings based on your preferences.
