Ingredients

  • 1 cup rolled oats
  • 1 ripe banana, mashed
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Combine the mashed banana and almond butter in a large mixing bowl.
  4. Add in the honey or maple syrup and vanilla extract, and stir well.
  5. Mix the rolled oats, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture and fold gently.
  7. Drop the dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for about 12-15 minutes, or until edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
