Ingredients

  • 1 cup fresh or frozen blueberries
  • 1/2 cup honey or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with butter or non-stick spray.
  3. Combine the rolled oats, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
  4. Whisk together the yogurt, honey (or maple syrup), vegetable oil, eggs, and vanilla extract in a separate bowl.
  5. Add the wet mixture to the dry ingredients and stir until just combined.
  6. Fold in the blueberries carefully.
  7. Pour the batter into the prepared baking dish.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for about 10 minutes before slicing and serving.
