- 1 cup plain yogurt
- 1 cup fresh or frozen blueberries
- 1/2 cup honey or maple syrup
- 1/4 cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a baking dish with butter or non-stick spray.
- Combine the rolled oats, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
- Whisk together the yogurt, honey (or maple syrup), vegetable oil, eggs, and vanilla extract in a separate bowl.
- Add the wet mixture to the dry ingredients and stir until just combined.
- Fold in the blueberries carefully.
- Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool for about 10 minutes before slicing and serving.
