Description

A delightful sandwich made with shredded chicken, gooey mozzarella, roasted red peppers, and garlic pesto, crisped to perfection.


Ingredients

  • Crusty bread
  • Mozzarella cheese
  • Roasted red peppers
  • Shredded chicken
  • Garlic pesto
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your panini press to medium-high heat.
  2. Spread garlic pesto on one side of each slice of bread.
  3. Layer shredded chicken, roasted red peppers, and mozzarella cheese on the pesto side of one slice.
  4. Season the filling with a pinch of salt and pepper.
  5. Close the sandwich with the second slice of bread, pesto side facing down.
  6. Brush the outside of the sandwich with olive oil.
  7. Grill the sandwich in the panini press for 3-5 minutes until crispy and the cheese is melted.
  8. Slice the sandwich in half and serve hot.

Notes

Serve warm with a side salad, homemade chips, or soup. Optional: drizzle with balsamic glaze.
