Ingredients
- Crusty bread
- Mozzarella cheese
- Roasted red peppers
- Shredded chicken
- Garlic pesto
- Olive oil
- Salt
- Pepper
Instructions
- Preheat your panini press to medium-high heat.
- Spread garlic pesto on one side of each slice of bread.
- Layer shredded chicken, roasted red peppers, and mozzarella cheese on the pesto side of one slice.
- Season the filling with a pinch of salt and pepper.
- Close the sandwich with the second slice of bread, pesto side facing down.
- Brush the outside of the sandwich with olive oil.
- Grill the sandwich in the panini press for 3-5 minutes until crispy and the cheese is melted.
- Slice the sandwich in half and serve hot.
Notes
Serve warm with a side salad, homemade chips, or soup. Optional: drizzle with balsamic glaze.
