Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup rolled oats, blitzed into a rough flour
  • 3 tablespoons coconut sugar or brown sugar
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 8 oz mascarpone cheese, at room temperature
  • 1/4 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1/3 cup fresh lemon juice (about 23 lemons)
  • 1 teaspoon lemon zest
  • 4 tablespoons unsalted butter, cubed
  • 1/3 cup flaked almonds, toasted until golden

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch tart tin.
  2. Mix almond flour, blitzed oats, coconut sugar, and salt in a bowl.
  3. Pour melted butter into the dry ingredients and stir until it resembles wet sand.
  4. Transfer the crust mixture into the tart tin and press down evenly and firmly.
  5. Bake the crust in the oven for 12–14 minutes until golden and set, then let it cool completely.
  6. Whisk together egg yolks, granulated sugar, fresh lemon juice, and lemon zest over medium-low heat until the mixture thickens (about 8–10 minutes).
  7. Remove the thickened mixture from heat and stir in cubed butter until smooth.
  8. Pour the mixture through a fine sieve into a bowl, cover with plastic wrap, and refrigerate until cooled.
  9. Beat the mascarpone cheese, heavy cream, powdered sugar, lemon zest, and lemon juice in a separate bowl until smooth.
  10. Spoon the mascarpone filling into the cooled tart shell and refrigerate for 30 minutes to set.
  11. Pour the cooled lemon curd on top of the mascarpone layer, spreading it gently.
  12. Scatter toasted almonds over the top before the lemon curd sets.
  13. Refrigerate the finished tart for at least 1 hour before slicing and serving.

Notes

For the best flavor, use freshly squeezed lemon juice. Ensure mascarpone and eggs are at room temperature for a smooth filling.
