Ingredients

- 150 g digestive biscuits
- 60 g unsalted butter, melted
- 250 g cream cheese, softened
- 75 g icing sugar
- 1 tsp vanilla extract
- 150 ml double cream
- 6 Jammie Dodger biscuits
- 6 tsp raspberry or strawberry jam
Instructions
- Line a muffin tin with paper cupcake cases.
- Crush the digestive biscuits and combine with melted butter, then press into cupcake cases and chill for 10 minutes.
- Beat cream cheese, icing sugar, and vanilla extract in a bowl until smooth.
- Whip the double cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Spoon the cheesecake mixture over the biscuit base and smooth the tops.
- Cover and chill for at least 3 hours until set.
- Top each cheesecake with jam and place a Jammie Dodger on top before serving.
Notes
Best served chilled. Store leftovers in an airtight container in the fridge for up to 3 days, adding toppings just before serving.
