Description

Delightful bite-sized cheesecakes combining creamy filling with the sweet flavors of Jammie Dodgers, perfect for any occasion.


Ingredients

Scale
  • 150 g digestive biscuits
  • 60 g unsalted butter, melted
  • 250 g cream cheese, softened
  • 75 g icing sugar
  • 1 tsp vanilla extract
  • 150 ml double cream
  • 6 Jammie Dodger biscuits
  • 6 tsp raspberry or strawberry jam

Instructions

  1. Line a muffin tin with paper cupcake cases.
  2. Crush the digestive biscuits and combine with melted butter, then press into cupcake cases and chill for 10 minutes.
  3. Beat cream cheese, icing sugar, and vanilla extract in a bowl until smooth.
  4. Whip the double cream until soft peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture.
  6. Spoon the cheesecake mixture over the biscuit base and smooth the tops.
  7. Cover and chill for at least 3 hours until set.
  8. Top each cheesecake with jam and place a Jammie Dodger on top before serving.

Notes

Best served chilled. Store leftovers in an airtight container in the fridge for up to 3 days, adding toppings just before serving.
