- 1/2 cup oats
- 1/2 cup plant milk
- 1 tablespoon maple syrup

- 1 teaspoon baking powder
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon
Instructions
- Start by gathering all your ingredients.
- Next, peel the banana and break it into smaller pieces.
- Add the banana, oats, plant milk, maple syrup, chia seeds, vanilla, baking powder, coconut sugar, and cinnamon to a blender.
- Blend all the ingredients together until smooth.
- Preheat your oven or toaster oven to 400°F (200°C).
- Pour the blended mixture into a small oven-safe baking ramekin or muffin tins.
- Place the ramekin in the oven and bake for 20-25 minutes.
- Remove the ramekin from the oven and let the muffin cool slightly.
- Garnish with a sprinkle of cinnamon and coconut sugar if desired.
