  • 1 teaspoon baking powder
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon

Instructions

  1. Start by gathering all your ingredients.
  2. Next, peel the banana and break it into smaller pieces.
  3. Add the banana, oats, plant milk, maple syrup, chia seeds, vanilla, baking powder, coconut sugar, and cinnamon to a blender.
  4. Blend all the ingredients together until smooth.
  5. Preheat your oven or toaster oven to 400°F (200°C).
  6. Pour the blended mixture into a small oven-safe baking ramekin or muffin tins.
  7. Place the ramekin in the oven and bake for 20-25 minutes.
  8. Remove the ramekin from the oven and let the muffin cool slightly.
  9. Garnish with a sprinkle of cinnamon and coconut sugar if desired.
