A delightful and nutritious dessert made with the natural sweetness of carrots and oranges, combined with creamy cottage cheese for a protein-packed treat.

- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 cup finely grated carrots
- 1/2 cup oat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 1/4 cup crushed walnuts or pecans
- 2 tbsp brown sugar or coconut sugar
- 1 tbsp melted butter
Instructions
- Preheat the oven to 175°C (350°F).
- Prepare a small baking pan by lining it with parchment paper.
- Blend the cottage cheese until smooth in a blender or food processor.
- Add the eggs, maple syrup (or honey), and vanilla extract to the cottage cheese, blending until well combined.
- Gently fold in the finely grated carrots.
- In a separate bowl, mix the oat flour, protein powder, baking powder, cinnamon, and salt.
- Pour the dry ingredients into the wet mixture and stir until just combined.
- Mix crushed walnuts (or pecans), brown sugar (or coconut sugar), and melted butter for the topping.
- Pour the batter into the prepared baking pan and spread it evenly.
- Sprinkle the nut mixture over the top of the batter.
- Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Notes
Serve the cake warm or at room temperature, optionally topped with Greek yogurt or cream cheese frosting.
