Description

A delightful and nutritious dessert made with the natural sweetness of carrots and oranges, combined with creamy cottage cheese for a protein-packed treat.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup finely grated carrots
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/4 cup crushed walnuts or pecans
  • 2 tbsp brown sugar or coconut sugar
  • 1 tbsp melted butter

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Prepare a small baking pan by lining it with parchment paper.
  3. Blend the cottage cheese until smooth in a blender or food processor.
  4. Add the eggs, maple syrup (or honey), and vanilla extract to the cottage cheese, blending until well combined.
  5. Gently fold in the finely grated carrots.
  6. In a separate bowl, mix the oat flour, protein powder, baking powder, cinnamon, and salt.
  7. Pour the dry ingredients into the wet mixture and stir until just combined.
  8. Mix crushed walnuts (or pecans), brown sugar (or coconut sugar), and melted butter for the topping.
  9. Pour the batter into the prepared baking pan and spread it evenly.
  10. Sprinkle the nut mixture over the top of the batter.
  11. Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
  12. Let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Serve the cake warm or at room temperature, optionally topped with Greek yogurt or cream cheese frosting.
