Description

A delicious and easy-to-make stuffed chicken dish featuring a creamy peach filling and a drizzle of thyme honey sauce.


Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt & black pepper
  • 150g / 2⁄3 cup cream cheese, softened
  • 1 ripe peach, diced
  • 1 tbsp honey
  • 1 tbsp fresh thyme, chopped
  • 3 tbsp honey
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • 1 tbsp fresh thyme

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Mix the softened cream cheese, diced peach, honey, and chopped fresh thyme in a small bowl.
  3. Prepare each chicken breast by cutting a deep pocket into the side, then stuff with the peach and cream cheese mixture.
  4. Season the stuffed chicken breasts with olive oil, paprika, salt, and black pepper.
  5. Sear the chicken breasts in a hot skillet for about 3 minutes on each side until golden brown.
  6. Bake the chicken in the preheated oven for 15–18 minutes until cooked through.
  7. Make the thyme honey sauce by melting butter and mixing in honey, thyme, and lemon juice.
  8. Rest the chicken for 5 minutes before serving it topped with the thyme honey sauce.

Notes

Serve with roasted vegetables, salad, or rice. For a lighter option, consider steamed green beans or broccoli.
