Ingredients

- 2 cups of rice
- 4 cups of water
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups of mixed vegetables (carrots, peas, bell peppers)
- 1 teaspoon of black pepper
- 1 tablespoon of soy sauce
- Optional: chopped green onions for garnish
Instructions
- Rinse the rice under cold water to remove excess starch.
- Bring 4 cups of water to a boil in a medium pot. Add 1 teaspoon of salt and rinsed rice, cover the pot, reduce heat, and let simmer for 18-20 minutes.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic to the skillet and cook for an additional minute.
- Add mixed vegetables to the skillet and cook for 5-7 minutes until tender.
- Fluff the rice and combine it with the sautéed vegetables.
- Season with 1 teaspoon of black pepper and 1 tablespoon of soy sauce, stirring until combined.
- Optional: Top with chopped green onions for garnish.
- Cook together for another 2-3 minutes before removing from heat.
- Serve hot and enjoy!
