Ingredients

  • 200g dark chocolate
  • 150g unsalted butter
  • 200g sugar
  • 3 large eggs
  • 100g all-purpose flour
  • 50g cocoa powder
  • 1/2 teaspoon salt
  • 300g cream cheese
  • 100g powdered sugar
  • 200g fresh raspberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the dark chocolate and unsalted butter over a double boiler.
  3. Whisk together the sugar and eggs until light and creamy.
  4. Combine the cooled chocolate mixture with the egg mixture.
  5. Sift together the all-purpose flour, cocoa powder, and salt, then fold into the batter.
  6. Prepare a 9-inch springform pan by greasing it.
  7. Make the cream cheese mixture by blending cream cheese, powdered sugar, and vanilla extract.
  8. Layer the cream cheese mixture over half of the brownie batter in the pan.
  9. Add fresh raspberries on top of the cheesecake layer.
  10. Top with the remaining brownie batter, spreading evenly.
  11. Bake for 30-35 minutes until done.
  12. Cool the cheesecake in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  13. Serve chilled, optionally garnished with additional raspberries or whipped cream.

Notes

Use high-quality chocolate for best flavor. Avoid overmixing to keep the texture light and fudgy. Fresh raspberries are best, but frozen can be used if needed.
